If you require quick Leather in the early game, Pals like Vixy and Rushroar are some of your best bets for farming. These creatures are available quite early in the game and are mostly below Level 10 so you should not have a very tough time farming them as well.
Both these species can be found in the southern forest, which appears yellowish on the map, and you can farm them constantly for Lather, and even Bones in Palworld. However, if you want additional Leather drops, you can butcher them using the Cleaver after catching them.
